2011 WBC Finalist Número Tres

The third barista competitor of the day, Matt Perger, the Australian champion just finished his routine. He featured a coffee from a farm in Tanzania called clouds. The judges’ table had a topographic map carved in wood of the farm, and Matt used it to show where on the farm his coffee had been grown, where the mill is, and where the farmer lives.

He identified three prominent flavors in his espresso red currant, cocoa, and raisin, and he crafted his signature drink ( with the input of the judges) to highlight these flavors.
