Test Drive: The OTTO Ibrik Brewer

We try out OTTO by Goat Story, a contemporary ibrik brewer combining traditional coffee-making methods with modern design.

Last year, in a bid to modernize a time-honored brewing tradition, Slovenian coffee equipment maker Goat Story launched its latest product: the OTTO, a contemporary take on the traditional ibrik brewer. The launch was supported by a successful Kickstarter campaign that raised over $81,000, reflecting a strong interest in this brewing tool. 

We put the OTTO to the test to see how it performs.

Discovering OTTO by Goat Story

The OTTO by Goat Story is a coffee pot that combines rich historical brewing methods with a contemporary design. Drawing inspiration from the centuries-old techniques of the ibrik or çezve, OTTO offers a modern twist. Crafted from stainless steel, this pot is designed for both durability and aesthetic appeal.

With a volume capacity of 550 ml, the OTTO can brew up to five cups of coffee at once, catering to both personal use and small gatherings. The pot’s dimensions include a height of 16.2 cm, a width of 10.2 cm without the handle, and 23.6 cm with the handle. Weighing in at 385 g, it is lightweight yet solid enough to handle regular use. 

Stove Compatibility & Brewing Options

Another feature that drew me to OTTO was its versatility; it works with all types of stoves, including induction hobs. However, according to Goat Story, there are a small number of induction cooktop models out there that have issues detecting smaller-diameter pots and pans. To make sure your cooktop will work with OTTO, it’s a good idea to test it with a similar-diameter induction pot before ordering. The base diameter of the brewer is 96mm.

OTTO can also be used with micro-burners, for those who love to brew on the go. And for the traditionalists out there, it works well with sand coffee makers, adding an authentic touch for those who truly enjoy the art of Turkish coffee brewing!

Brewing Experience with the OTTO

For my test, I had some friends over and brewed five cups of coffee. I followed a simple yet effective recipe that highlights the capabilities of this ibrik:

Ingredients:

  • 30g of specialty coffee
  • 300g of warm water 

Brewing Steps:

  • I used three clicks on my Comandante grinder to grind the coffee to a flour-like consistency 
  • I began by adding the water to the OTTO, followed by the freshly ground coffee.
  • Using a wooden stirrer, I mixed the coffee grounds with the warm water. 
  • I then activated my micro-burner at medium heat and allowed the mixture to simmer for two minutes and 30 seconds.
  • After timing concluded, I poured the brewed coffee into my cup and let it settle for an additional two minutes to enhance the flavor profile.

Upon tasting the coffee, I was very pleased with the rich and robust flavor that the OTTO produced. The extraction was clean, with no residue adhering to the pot, thanks to its stainless-steel construction. This made for an easy cleanup, a significant advantage for any coffee enthusiast.

One notable feature is the rubber grip, which effectively prevented any burns to my hands (a common issue with traditional ibriks). Additionally, the OTTO’s design accommodates both left- and right-handed users, ensuring a comfortable brewing experience for everyone.

Cooking Methods & Maintenance

In addition to testing with the micro-burner, I replicated the same recipe using an electric stovetop, and the results were equally effective.

For those interested in the traditional art of sand coffee brewing, note that this method may require additional time for the sand to heat up and for the coffee to brew effectively. 

Regarding maintenance, Goat Story advises against using the dishwasher for cleaning the OTTO. Instead, use warm water and mild soap for routine cleaning.

Innovation Within Tradition

Ibrik coffee is one of the oldest brewing methods still in use today, enjoyed in many countries across the Balkans and the Middle East. I grew up in a Greek household, and ibrik coffee was indeed an integral part of our daily ritual. It’s refreshing to see how products like the OTTO can innovate within the context of tradition, making classic brewing techniques accessible and appealing to a modern audience.
